Through this Torii Mor, this earth gate, we step, to make glad
the soul, with wine - TM's tagline
 This
new arrival to our shelves is sure to create a buzz. Founded
in 1993 by Don & Margie Olson, the name Torii Mor was chosen
because it conjured feelings of unique elegance. Borrowing
from the Japanese, Torii is the name for the ornate
gates seen at the entrances of gardens. Mor is
ancient Scandinavian for earth.
Winemaker Jacques Tardy joined Torii Mor in 2004 and has
since been on a mission to produce amazing Oregon wines. On
her last trip to Oregon wine country, Schaefer's very own
Barbara Rooks experienced first-hand what Tardy has done in
his short time with Torii Mor. Barbara shared with me the
vast difference in flavor between the year of his arrival
and the year before - it was like night and day, with an
incredible increase in flavor intensity in the wines.
Their 2006 Willamette Valley Pinot Noir is an exciting wine.
The aromas are of boysenberry and dark cherry with hints of
graham cracker and caramelly oak. A subtle earthy
characteristic lies behind the fruit and will come forward
with age. The flavors show cocoa, prune and barrel toast.
The soft, silky mouth feel is enhanced by a variety of ripe,
juicy flavors. The finish is wonderfully balanced and
lingers with long notes of fruit. Delicious now, but
definitely something to cellar!

More Mor
 After
doting on the Torii Mor Willamette Valley Pinot Noir, we
couldn't pass up this opportunity to share their Pinot Gris
with you. Blended with grapes from three vineyards for
balance, the wine has a crisp acidity, with lively ripe
pear, apple and honey notes that are rounded out by a hint
of citrus. The mouthfeel is rich and round with a touch of
crispness. This wine finishes wonderfully oily and long with
lasting spice and fruitiness.

Good ole Texan from Germany shines!
 Nestled
in the Texas hills between Houston and San Antonio, there's
a small brewery that has put the town of Shiner, Texas on
the beer map. Incorporated in 1909 as the Shiner Brewing
Association, the oldest independent brewery in Texas is now
known as the Spoetzl Brewery. Kosmos Spoetzl, a German
immigrant brewer, leased the plant with an option to buy in
1914. He came to Texas with his Bavarian family beer recipe
made with malted barley and hops.
Shiner Bock, the brewery's flagship beer, has surged in
popularity in the past decade and now accounts for 80% of
the beer brewed at Spoetzl. The beer pours a caramel, maple
syrupy color with a nice sturdy head. The nose is of lightly
toasted malt and caramel, slightly sweet, but not
overpowering. On the tongue, you'll notice a slightly
biscuity/toast flavor which comes from the malted barley.
Shiner Bock is perfect to pair with German and Thai cuisine,
sushi and barbecue. Cheese pairings include Camembert,
Fontina, Asiago, and aged Goudas.

Comfort food straight from the Alps
 A
Raclette meal is one of Switzerland's best-loved national
dishes, and is also hugely popular in France and Germany
and, believe it or not, the sparkling North Shore of Chicago
in the fall.
We sell a lot of Raclette during autumn. As one of the great
melting cheeses it is just right for a chilly day. Produced
on both the Swiss and French sides of the Alps, the word
racler means, "to scrape off". A big wedge of Raclette
cheese can be set on a board by a roaring fire and left to
soften and melt, then scraped onto a plate, very romantic.
The cheese can alternatively be sliced and heated in a
special Raclette warmer, which has little dishes for
individual portions, or simply heated in your oven on
ovenproof plates. Traditionally the melted cheese is served
with tiny, waxy, boiled potatoes, cornichons, pickled onions
and paper-thin slices of ham. A Raclette meal is a filling
meal. Enjoy it for its great simplicity and heartiness.
Raclette is comfort food at its best, traditionally served
with kirsch or herbal tea! We like a beautiful
Pinot Gris
from Alsace or try it with the new
